Imported directly from Japan, Bincho Charcoal is a unique type of charcoal that Shin Kushiya uses specially for our signature Kushiyaki and grilled dishes offering our charcoal-grilled food a crisp smokiness while sealing the natural ﬂavours and juices within.
Shin Kushiya is one of the first Japanese restaurants to introduce the kushiyaki dining concept in Singapore, where affordable, quality Japanese cuisine is served in an elegant, contemporary setting.
The spirit of kushiyaki lies in the skilful preparation and grill of Shin Kushiya’s signature kushiyaki skewers, reflecting the time-honoured traditions and culinary craftsmanship of kushiyaki in Japan. Diners may choose from a generous selection of kushiyaki skewers, made using the freshest and quality meats, seafood and vegetables grilled over Japan-imported Bincho Charcoal, known as the King of White Charcoal.
Bincho Charcoal burns at a high temperature of 1,000 – 1,200°C, enabling a crisp exterior whilst sealing the natural flavours and juices within, imparting a savoury smokiness to the signature kushiyaki skewers.

Shin Kushiya opened its flagship restaurant at VivoCity on 6 October 2006, along with the commencement of the iconic retail, entertainment and lifestyle mall.
The 180-seater venue offers a contemporary setting for a multi-sensory epicurean journey – from dining with a gorgeous waterfront and Sentosa island views, to experiential kushiyaki grill and sushi bar, it is the perfect venue for an immersive dining experience.
For group dining, private dining rooms are also available.
Our signature Kushiyaki are prepared with fresh ingredients on a daily basis, in the restaurant and NOT in a central kitchen.
Each Kushiyaki is layered with our proprietary salt-mix or house-special Tare sauce using time-honoured tradition and culinary craftsmanship
Kushiyaki skewers are grilled over Bincho Charcoal, imparting a characteristic smoky flavor.
